“It all started having been sent to work in pastry whilst in my first paid job as a recently graduated commis chef. Initially quite intimidated, the ingredients, combinations and textures became an all-consuming way of life for me. The possibilities, combinations and results due to small changes were astonishing, I quite literally ate my way through my work. This  department exposed me to numerous facets, from high teas, banqueting and restaurant to many nights as the baker for a large hotel.  Having joined the Wild Peacock team last year, I’ve had the privilege to spend time with some of the South Africa’s best chefs. With the support from companies such as Valrhona, Sosa and Boiron we really have an opportunity to gain so much insight and knowledge and we look forward to sharing this with you all.”
